Pie Crust - buy a premade one or make your own
Pie Crust Ingredients:

1 1/4 cup of flour
1/3 cup of crisco shortening (sold at USAfoods)
5-6 tablespoons of lukewarm water
pinch of salt

Stir together slowly adding in water until you get a nice dough ball

Roll dough flat on non-stick or floured surface and place in pie tin. If you are making for friends or critics, layout the dough out nicely. If you are making for yourself, your husband or blog readers just chuck it in all sloppy, as shown.

Bake for 13 minutes at 210C on your conventional oven setting until it goes golden brown. I have no idea why one side collapsed. I think that goes along with the sloppy factor.

Strawberry Pie Recipe
recipe from handout at Jacob's U-Pick Strawberry Farm where I picked berries with Grandma June in 1985. Step by Step pictures below.

Ingredients:
1 1/2 quarts strawberries
1 cup sugar
3 tablespoons cornstarch(that's called cornflour in Australia)
2 tablespoons lemon juice

Wash berries.

Look for any freakishly large or neanderthal berries that may look like the Virgin Mary to sell on ebay.

Cap berries and place half aside for later. Chop neanderthal berries into edible sizes.

Mash the rest and add sugar and cornstarch, mixed together. It should look goopy and opaque at this point.

Cook 5-6 minutes until clear and thick. Don't worry, it will go clear. Do not use too much heat or sugar will carmelize on pan. Stir in lemon juice.

Cool. Add remaining berries to mixture. Pour into baked pastry shell.

Top with Cool Whip or other whipped cream. Enjoy outside on a summer's day!

Looks delicious! I will make this one for sure. One of the best food combinations ever is strawberries and cream.
ReplyDeleteAmy, I love your blog - it makes me laugh. This recipe also sounds delicious - hoping for a strawberry glut in the garden this year
